Chi Spacca is Nancy Silverton's beef and butchery room on Melrose Avenue, the meat end of the Mozza group. A fifty-ounce bistecca fiorentina — a Tuscan porterhouse cut for a table — is the centerpiece of the menu and the clearest statement of what the kitchen does with fire.
