In the operator's own words it was built between 1888 and 1891 by Gioacchino Ersoch. The engineer Filippo Laccetti worked on the project and devised a system for disposing of offal into the Tiber. It covers 25,000 square metres and is of the pavilion type, laid out on a geometric plan with the slaughter halls flanking the main avenue and the pig and offal work pushed to the periphery, on what is now via Manuzio. It was decommissioned in 1975 and replaced by a plant at Tor Sapienza. The restoration grew from an idea of Zoneattive in the early 2000s, and site works ran from 2006 to 2010 on the water-tank pavilions, the pelanda and the pig slaughterhouse. In 2000 pavilion 7 on via Aldo Manuzio and the pavilions along via Beniamino Franklin were converted into lecture rooms for the architecture faculty of Università Roma Tre, and the Accademia di Belle Arti also occupies part of the complex. In 2002 pavilions 9a and 9b went to MACRO for contemporary art, first as Macro Future and then as Macro Testaccio. Musei in Comune managed the site until 2017; since 2018 a significant part has been managed for Roma Capitale by Azienda Speciale Palaexpo. One scheme that would have removed it came to nothing: Ponte Testaccio, begun in 1938, was to have been carried on towards Trastevere station by demolishing the slaughterhouse, and the demolition never took place.
